Handy Tips
When
slicing, chopping or mincing onions do so near a fire (your stove) and you will see
that crying is no more a problem.
For example, my cutting board is near the stove and most times I would have a pot cooking away when I do my chopping.
To ease the burn when eating a
too-hot chili, reach for the nearest starchy food instead of water.
Because capsaicin -the
chili's heat source - is an oil, it mixes better with
starch.
When
soaking your dried peas (beans) overnight, add a little of baking soda
(bicarbonate) to the water. This not only tenderizes the beans faster but it
helps with not being the only one in a room.
(Rinse well before cooking.)
To prevent
your tomato paste from getting moldy or mildew (blue) just put the bottle in the door of
your freezer and scoop out the portion when needed. Try this with your Ragu
bottles as well.
Fresh
parmesan cheese is healthier to use instead of that stuff in the green container and it's one of
those cheeses that freezes well. Buy a good quantity of already grated and freeze
in a freezer safe container until ready to use.
Ever had
fresh lemon juice or orange juice that's just too acidic? Add a few drops of
Angostura bitters.
Mix
2 Tbsp. of Angostura bitters with a 1/2 cup of water to settle an upset stomach.
Ever had a
party and found toothpicks all over the place? Use slender pretzel sticks as
toothpicks. These tiny sticks adds a salty crunch to the bite.
When out of
tomato paste use ketchup instead. This is one of those Caribbean old secrets.
But it's not suitable for Mediterranean dishes.
Add 2 to 4
Tbsp. of cooking oil to your boiling water for pasta, rice or potatoes. This
keeps the water from boiling over.
Adding a
garlic clove to the containers of your rice, pasta, bread crumbs, flour, etc.,
keeps the insects away.
